Best Mac n Cheese ever

Well, maybe. I was looking for different. Got the idea from a dry mix @ Target. I like to make stuff from scratch, so I did. It's buffalo style with sharp cheddar, blue cheese, and hot sauce. Mmmmm. I used about a cup of homemade white sauce, 1 cup shredded cheddar, 3 T crumbled blue cheese, 1 1/2 T margarine, 6 or 7 dashes hot sauce, sprinkle of celery salt, 1/2 box macaroni. You could certainly make it hotter.

That does sound good. For the white sauce, do you make a roux out of melted butter and flour, then add warm milk and/or chicken stock to it and let it simmer till thick?

I used milk and a slurry of cornstarch & water (your basic recipe on the cornstarch box). I don't use chicken stock 'cause I'm a veggie.
