Just had my results back from the hospital.

I can tell you right now, low fat cheese tends to be highly unnatural, and doesn't melt right. http://lowfatcooking.about.com/od/faqs/f/cheese.htm This mentions a few that are naturally low fat, like goat cheese and such. Undoubtedly a more thorough internet search can dredge up better/more options.
Why does fat have to be so darn tasty?
So are you feeling any better? Last I read, you were just out of the hospital and not feeling well at all.

Hi :)

Yes, thanks, feeling better, and should be back at work middle of next week after another checkup.Temperature has finally gone down for good (it was up and down) and I don't feel so dizzy now.

This I think is a wake up calland THIS TIME I REALLY HAVE TO follow a sensible diet.It will be difficult but I know you will all help.

And I MUST do a food logas well, that will help.

So if I can be terribly, terribly nosy-- wtf was going on??? It sounded scary and all sorts of dramatic... :(
of course, feel free to slap my inquiring internet tentacle and say "No! Bad Teh!" :roll"
And yes, very glad you're well enough to post, and even go back to work!

No, TBK, I don't mind you asking but I don't want this to turn into a sympathy fest for me, if you see what I mean. From what the doctor has told me, and what has been very worrying, this looks like a (very minor) heart problem. The ECG was all over the place as well.I really hope that doesn't come across all dramatic because it isn't how it's meant. I had a high temperature and was dizzy and nauseous and my blood pressure was very high.

I did have a pain in the chest but not dropping to the floor dying and clutching my chest, like in films, just a vague tightness. In fact it was so unnoteworthy I didn't think it was related, I knew I didn't have pneumonia or anything which could have caused it. I did have numbness in my arm but it was more like when you wake up aftersleeping on it. But my doctor says it could be heart related. On Tuesday I have to have some more ecgs done to see.

I certainly don't want that to happen again.:(

It sounded like a couple of things, like a low-grade heart attack, the flu, and random stuff. (The arm-thing sounds like what I hear about women and heart attacks.) I've heard so many stories about how small things like that get to be big things, or the doctors discover major arterial blockage and omg operate now! type stuff... and I'm pretty sure my mind can generate the drama!
Best of luck with the tests. I hope you don't get too many needles poked in you.

that is one of my favorite phrases  did your doc tell you what percentage of your calories should come from fat? Stay away from eggs for a while, they're very high in cholesterol.

Why does fat have to be so darn tasty?

It's concentrated energy. Same with sugars.

Before modern agriculture and modern automation, most people struggled to get enough to eat, and did hard physical labour much of the time. This means that they had to get all the energy for the hard physical labour from what foods they could get their hands on.

All our recipes with lots of cream, lard, oil, honey, or sugar tend to date from that time.

Before agriculture at all, when we were hunter/gatherers, a cache of honey or the fat from a hibernating bear might make all the difference for surviving a winter. So evolution made us loooove the concentrated energy.

Don't worry, though. You can retune your taste buds, to a degree. Over time, you'll start to find things oversweet, or overly fatty.

Oh, I know Seshat, I know!
But whyyyyyy~~!/whines unattractively some more
(yes, I'm bemoaning the delicious downfall of industrialized humanity that is fat, and understand the evolutionary/historical background that's led us up to this point)

If someone made low fat medium sugar DAMN GOOD CHOCOLATE, I'd be in. IN a heart beat.

But sadly enough, I'm also overweight and my cholesterol isn't so happy either. I do eat lots of oat based things, and lots of high fiber.

look in fancy-dancy stores that sell super-organo-whatsits and strange supplements, they might have something in the way of chocolate that you'd like.

Well, they do make a no sugar chocolate that is very nice. And if you don't like the artificially sweetened stuff, semi sweet baking chocolate is good, too. The high cocoa dark chocolate stuff has a lot less sugar.

I bet if you knocked off the oat based stuff you're eating, your cholestrol would improve (I personally think we obsess too much over that, but whatever.).

I'm guessing that the "overweight" is muscle, from what I can tell of your exercise routine, Whiskeh. Also, I found a Kentucky bourbon cookbook.

Nah I still have a bit of chub left to go. But the pants that wouldnt fit are now too big, i dont have a single health issue I could prevent (asthma was a birth/mom was a smoker issue).

and when did oats become bad for cholesterol?????? Oats are wonderful for lowering cholesterol.

I've found the only good good chocolate I can eat is Ghiradelli semi sweet chips. :) those are the bomb.

Oats are great for removing cholesterol; if a person eats lots of veggies, brown rice, fibery things and small servings of red meat/white meat/protein stuff, the cholesterol goes down nicely.

At the risk of sounding like a devil's advocate, you really might want to look into eating a low-carb, HIGH fat diet. YES I know, it sounds the complte opposite of what you've been told by your doctors and everybody else, but there's sound science behind WHY its carbohydrates that cause high cholesterol and not high fat. Read Gary Taubes "Good Calories, Bad Calories" - its a HEAVY read, and very clinical, but it explains a ton. I'd also recommend Tom Naughton's (Of Fat Head fame) blog.

I was diagnosed with high cholesterol over a year ago and prescribed that "low-fat/low cholesterol" diet. I followed it to the letter, as well as exercising, and my cholesterol went UP!. I then got fed up and after doing some research, I was able to cut my cholesterol in half by going on a low-carb diet, and I've lost 40 pounds so far as well. My Dr is amazed, and still trying to wrap his head around it, but for some people (like me,) eating low fat actually causes HIGHER cholesterol. If you google Low Carb Friends there's an amazing support board with a ton of information, and a whole section about low carb and its health benefits.

Before people start screaming "ATKINS KILLS!!!" I eat low - carb, not NO carb. In fact at least 1/3 of my diet is composed of vegetables. That's where I get my carbs from, not from anything refined/sugary/floury.

Just adding my 2 cents, use it /discard it as you will.

Give up the dream. I've been telling people this for quite a while.

Going lower-carb would be really good for my physical health, but I'd probably go batshit crazy without bread in my life. Delicious crusty bread. I really don't have much of a sweet tooth (if it ain't chocolate, I don't even bother), but bread....bread is my friend.

Savour good breads. Find a baker who makes really, really good sourdoughs and rye breads and wholegrain breads and ciabattas and foccacias.

Allow yourself a certain amount of bread per day, and really savour it. Have small amounts of the GOOD stuff. :)

There's a couple of good local bakeries, but the two issues are cost and longevity. I live alone, and so good fresh bread goes stale/moldy before I can finish it. Frozen rolls, however, don't have that problem. :p

Try getting a single roll of <whatever>, or a few rolls. Or cut a full loaf into halves or thirds, and freeze all but one portion.

Yeah, me too. Going on about a decade of low carb lifestyle. I keep waiting for these terrible repercussions to happen to me that I keep getting warned about.

Evidently, I need to eat more french fries and beer to save my life. Who knew?

People who get put on the low fat high carb thing usually have their cholestrol go through the roof. (not that I think that matters beyond a symptom of an imbalance in the body, but what I do I know, I'm a maverick and a radical. ;) ) I'm just saying. The high fat low carb diet brings it down, along with the weight.

Yeah, also, I wanted to say the Taube book is really compelling. For more really awesome info/book reviews/commentary, check out Sean's Underground Wellness series on You Tube. He talks about the Taube book as well as other stuff.

So, if I get some nice bakery bread and freeze part...how do I wrap it up/heat it back up for maximum yumminess?

If you're freezing individual servings, then zip-lock bags work better than plastic wrap.
