    Whew. Holiday Baking Part One is officially concluded! I baked something like a thousand cookies in three days to fill boxes being sent to people in various places. SEVEN USPS medium flat rate boxes worth.

    Chocolate chip, oatmeal raisin, chocolate, variously flavored sugar cookies, snickerdoodles, and mini fruit and nut tarts.

    In a week and a half, I'm going to do it AGAIN, this time for the local people we're giving home made sweet baked goodness to.

    I think this officially seals it. I am insane. I volunteered to do this.

    That's a lotta cookies. On the other hand, with the cold snap we're having I could stand to do some backing - warm the house up, with productive benefits!

          Wow. And here I was feeling all accomplished for the 2 dozen chocolate/toffee chip cookies I managed tonight. That's a whole lot of baking!

              My mom makes these cookies every year (they're not specifically a Christmas cookie but that's the only time she makes them). They're really simple - butter, flour, brown sugar, vanilla, bake, pour on a bag of chocolate chips while still hot and spread as they melt, sprinkle on toppings, cut into squares, stick in the fridge until firm, then cut them apart (much easier to cut them while they're warm and then just cut the chocolate along the lines after it hardens). The recipe calls for semi-sweet chocolate and chopped nuts, but I don't eat nuts so she started making some with sprinkles for me. Last year I used dark chocolate chips and crushed candy canes and they were sooooo good - like peppermint bark on a cookie. I need to do that again.

                  Wow Kittish, I thought that first line with "a thousand" was a bit of hyperbole for emphasis 'til I got to the mailers part. That's a lot a cookies! Good on ya, I'm sure they'll be well received.

                      Here's a tweak for chocolate chip cookies that I've never seen anywhere. Friend of mine gave it to me. Add a quarter to half a teaspoon of lemon extract. Gives them a really lovely bright note.

                      I like the 'mad scientists' line.
