  • Pheasants, how do I cook this?

    It turns out that my friend went hunting last weekend and has a pair of pheasants for our Friendsgiving (2nd thanksgiving done w/ friends on Sat). They are actually farm raised, so I don't need to worry about tough meat, however they are full of shot, so I have to deal with that.

    The current idea is to butcher them (so we can get the shot out) and then cooking them up some how.

    I would love any and all suggestions, if you have good ones involving bacon I would love that.

      But I would always lay rashers of bacon over the breast of a pheasant before roasting anyway - as the breast tends to need less cooking than the rest of the bird, the bacon helps to stop the breast meat from drying out.

        If you're butchering it to get the shot out, then maybe it's worth butchering it completely and making pie? I made a pheasant and sage stuffing pie at one point and it was really good.

        Pigeon stir fry is also amazing. Never tried it with pheasant though.
