Please watch this video if you're planning on doing a fried turkey

Adding water (or a frozen turkey) to oil that's heated past it's flash point will cause a fireball.

In a nutshell - The water will expand almost instantaneously and as it boils over, the cooking oil comes in contact with the heat source under the pot and bursts into flame (fireball)


and to quote them...
never ever ever deep-fry a whole FROZEN turkey

Yup. In their first Christmas special. And Good Eats did one as well, though I think the derrick is a little overkill.
