So I slow-cooked a couple pounds of chicken (first marinated overnight in Italian dressing) and accidently over-cooked it, so it's very dry. I wanted a chicken salad recipe that is low in Mayo (as I hate the taste of the stuff) and high in flavour. Since I have a ton and a half of chores to do today I thought I'd throw this in here and check back around lunch-time to see if I get any bites.
Oh, and I tried the Reduced Sugar Devil's Food Cake mix by Pilsbury, made it with the Diet Rite instead of water, and recieved 10 out of 10 for a box cake mix from the Parentals. It's a definate Buy-Again.

I didn't think you liked chicken salad, but here it goes.
* 2 1/2 cups diced cooked chicken
* 1 cup finely chopped celery
* 1 cup seedless grapes, halved
* 1 cup chopped walnut or pecan (optional)
* 1 small minced onion
* 1/2 teaspoon salt
* 1 teaspoon Worcestershire sauce
* 1/2 cup Miracle Whip
The grapes seem to be a recurring theme. So it must be mandatory, though I would personally leave it out. I don't know if you like Miracle Whip or not (Personally, the stuff makes me gag) but this should be tasty with Dukes Mayo.
Combine everything in a bowl and eat with crackers or on a Kaiser Roll.

I just made it up like I usually make up my egg salad. Chicken, mashed hard boiled egg, a couple spoonfuls of Duke's, and pepper.

Tasted fairly good, considering I had no idea as to how it would taste. It was certainly better than dry chicken on pasta.

Have you tried dumping more italian dressing over the chicken and then mixing it with pasta? Then you'd have a simple chicken/pasta salad type thing.

my gf did something like that yesterday for a party, only she did it with t marzzetties(sp) poppyseed dressing, mandarin oranges and some pecans. was a little sweeter than im used to, but still was nice

Next time she makes it, have her add a table spoon or two of lemon juice. it'll help cut back on the sugar.

I had bought the smallest bottle of dressing with the least amount of carbs I could since I was only trying it out in the crock-pot in the first place (I don't eat Italian dressing on anything else and I didn't want to have a whole big bottle of dressing left that I wasn't going to use. Couldn't give it to Mom because it had Red Bell Peppers in it).
