Yes, nuts.

That's the theme of the latest cookoff I am participating in.

I am not, however, a big fan of nuts.

Frankly, I love pistachios and cashews, like peanuts, and tolerate macadamias if they are encrusting something. Not a big fan of pecans or almonds, and downright despise walnuts. To me, eating walnuts is like chewing on a coffee table.

To say the least, I was rather unenthused by this particular theme.

But as many varied recipes as I considered, I kept coming back to one. My all-time favorite desert, the Greek pastry, baklava. That sticky, honeyed, gooey, delightful, wonderful pastry that the Greeks invented. I love Greek food in general, but baklava? I can be bribed with a good baklava. Seriously.

And since baklava can be made with pistachios instead of walnuts, how could I NOT make it?

But as many of you know, I cook. I don't bake. I have only ever made one dessert, other than the make-your-own-sundae kind of thing. And that was for a sit-down meal I was hired to cook for!

But then, baklava is more like cooking than baking. You don't have to worry about a cake falling if you get the measurements wrong, and you really can improvise. I know this, because I had to do it THREE TIMES, as the recipe I had was, to put it politely, completely fucking wrong.

But it seems to have come out alright, the kitchen smells great, and if my fucking air conditioning wasn't broken, I'd be enjoying the hell out of the satisfied feeling of success. Of course, I don't know yet if it was a success, as I have not yet tasted it. I might have royally butchered it. We won't know till tomorrow night.

And of course, just because I am an asshole, I am also going to bring something I bought at the store today: dough-nuts. Hey, they're nuts, right? :D

So wish me luck.....I am letting my very first baklava cool before I slip it in the fridge and attempt to sleep in this fucking sauna, and then I get to open The Bar tomorrow before I head off to the Nutty Cookoff. Should be interesting.

Me, I love nuts of all kinds. Pistachios, brazils, macadamias, almonds, pecans, cashews (gesundheit!), even walnuts. The local farms grow hazelnuts and they'll be in season soon. Yep, I'm in heaven here! :D

ETA: I've checked various recipes and it seems you can use just about any damned nut you please. Huh. I should try that sometime.

It turned out.

No, seriously. I did not place in the top 3, but I wasn't really all that concerned with that. For the first time in my life, I made my favorite dessert in the world. I actually made fucking baklava. :eek: And it was goooood.

Was it great? No. But more than most recipes I've done in the past, this one told me what I am going to do different next time. I have a very clear idea of how I am going to make it next time. And will it be great then? I think so. I hope so.

I know I always say that I cook, I don't bake. I hold to that. But making baklava really is more cooking than baking, as it is not a precise operation like, say, a chocolate cake, and improvisation is not only possible, but sometimes necessary. Hell, I had to diverge from the recipe I was using at least three different times to make this one work, and I have even more changes planned for my next attempt, which will probably be pretty soon, since I have ALL the ingredients ready to rock here at home.

I am looking forward to making baklava for my really good friends and perhaps even my parents (if their strict "old age" diet allows it). That would be cool!

I've been eating baklava since I discovered it when I was (thinking) 15 or so? Maybe younger? If it was 15, that was 1985. I have NEVER seen it or even HEARD of it with almonds. Not saying it doesn't exist, just saying I have never heard of it.

Baklava since I was 6. My family is primarily European so I've eaten it for years.

That being said, since I am NOT a fan of almonds, I don't expect to be making it with almonds anytime soon. As in ever.

I'll stick to pistachios, thank you very much.

Hey, that much more almonds and almond baklava for you, right? :D

Personally, I hate almonds too. But I make the exception for Baklava.

I agree - Baklava with almonds.. particularly slivers..... but hey.

Pistachios? My first thought was Indian Kulfi!!! YUMMSSS@!!!!!!! (but crush the nuts, don't grind!!!)
