Is lard a trans fat? We're supposed to go out for Barberton chicken, and I was curious before I commit.

Trans fats are caused by partial hydrogenation of vegetable oils. There are also naturally occuring trans fats in animal fats, but they are not believed to be as bad as the man-mad ones.

There's still a shedload of mystery over the matter, so I'd be cautious about what you believe.

What's Barberton chicken?

I used to be very wary of lard, but it is the BEST fat for making pastry so now I suck it up and appease my conscience by getting best quality lard from the butcher.

Barberton chicken is a type of fried chicken that originated in Barberton, Ohio. There are about 4 or 5 places in our area that serve it, and you can't find it anywhere else as far as I know. I could be wrong, some Barbertonite could have moved away and opened a restaurant of course. It's usually served with hot rice, coleslaw and steak fries.

The last time I had it was when a family member died- we all went to their favorite restaurant just as they would have wanted, and the chicken was (in my opinion) to die for. And usually, I only say that about perfectly done filet with cajun shrimp and french onion soup- I'm pretty picky.
