I wonder if modern cruises have anything even close to comparable.

I first read the title as "modern cruiseRs".

Maybe I watch too much Drachinifel...
“There are two novels that can change a bookish fourteen-year old’s life: The Lord of the Rings and Atlas Shrugged.
One is a childish fantasy that often engenders a lifelong obsession with its unbelievable heroes, leading to an emotionally stunted, socially crippled adulthood, unable to deal with the real world.
The other, of course, involves orcs." -- John Rogers

The sommelier's dinner was close to that. The portions for each course were smaller and a new wine with each. Also the chef's kitchen (where they literally set up prep table for serving passengers) also had at least that number of courses. These were both on Princess cruises, IIRC.
With social distancing, I seriously doubt that you'll be seeing anything like this in the foreseeable future.
I'm trying to see things from your point of view, but I can't get my head that far up my keister!

      Who is John Galt?
