    Ick. Zucchini should be roasted in the oven with a bit of olive oil, salt, and pepper, not put in cookies.

        I even have a recipe for mock apple crisp that's made with sliced zucchini. If I didn't make it myself, I wouldn't have known it wasn't made with apples.

          I make zucchini brownies pretty often and they are freaking amazing. They make the brownies really moist and fudgey and you can't even tell it's in there. I have no doubt that those lemon zucchini bars are delish, I will probably try them and the no-bake cornflake cookies sometime soon!
