I'm trying to find out whether a drink with a single shot of espresso can be made 2/3 decaf.

I worked at Starbucks for 8 years...but this was back when there was no automation with the espresso machines...and you really had to know how to make drinks, unlike pressing a button to make a drink. I doubt you could get a 2/3rds decaf with the new automated machines. If it helps, just get a decaf drink. There is still caffeine in decaf coffee/espresso. If your drinking coffee, opt for the darkest roast. The darker the roast, the less caffeine it has. -
The coffee machines I see in my local bucks still drop an espresso into the bottom of the drink.
I suppose it wouldn't be beyond the realms of possibility of a 3 shot drink to have 2 with caffeine and one decaf.
Probably a good idea to pop in one day during a quiet period and ask them - at least then you'll have a definitive answer
