I'm reviving this thread for an update.
-Baxter is on regular food again and doing well
-He's gained back a huge chunk of the weight he lost. He went from 150 to 101 pounds while he was sick. He's back up to 115. He should be around 125-140.
-He had a check up today and the vet took him off the massive doses of Vitamin K he's been taking and scheduled him for a blood clotting factor test on Friday. We have to wait for the supplements to work out of his system so we know that the test is accurately reflecting what his body is actually producing. Assuming Friday's blood work comes back normal, Baxter will be officially declared healthy!
