I have a passenger van with large oversized visors.(approx 2xs size of car visor) Will the straps work for this? If not, are there strap extenders?

Most organizers I've seen like this have elastic straps, might wear out a bit earlier than on a car size visor.

If you, or someone you know is reasonably skilled with a sewing machine you can buy velcro (other hook and loop is available) and replace the straps yourself. Understand if you'd rather not go through the faff though.
