  • ground beef recipes?

    So I miscalculated some recipes and bought 6 pounds to much of ground beef. I have it broken up into one pound packages in my freezer, but i need some ideas to cook it into...

    Things I'm sick of eating (unless a new twist is given):
    Hamburgers
    meatloaf

    Anyone have any tasty ideas to help eat this out of the freezer?

    A favorite in my house is "Mummy Bread", so named because if you get artistic with it, you can make it look like mummies.

    You need:

    -Ground Beef
    -Onions
    -Bell peppers in the color of your choosing
    -Italian bread
    -Italian Dressing
    -Provolone cheese

    Directions:

    -Cook the ground beef in a couple tablespoons of Italian dressing. Drain the grease when done.
    -Slice the onions and peppers and sauté those in a little bit of Italian dressing as well.
    -Cut the Italian bread length wise, then smoosh down the center of each half to create a bit of a bowl. Place on a baking sheet.
    -Spoon the cooked ground beef into the bread.
    -lay the cooked onion and pepper slices across the beef.
    -Cover the whole mess with Provolone cheese.
    -Put in the oven at around 350F for long enough to warm the bread and melt the cheese.

    Serves 4-8 depending on appetites.

    One warning with this: it does not keep/reheat well, so if you think that would be too much, only do half the loaf of bread.

        Check the Velvetta Cheesy Skillets line of products. I like the Nacho Supreme version. The kit has pasta, salsa, seasoning and cheese sauce. You just add one pound of ground beef and 2 cups of water. I also add some extra taco spices to kick the spiciness up a bit.

          Spag Bol and/or Chili con Carne come first to mind.

          Also, over here we have a variation of Sloppy Joe's where we fry the ground beef along with onions, garlic, shredded or julienne-cut carrots and other chopped veggies of your choice, mix it with gravy and serve on top of mashed potatoes. (you could call it a deconstructured Shepherd's Pie if you wish, makes it sound more sassy )

            Boyfriend's mom does this sort of mexican dish that's pretty tasty, and easy to make. It reheats well, too.

            1-4 pounds Ground beef (I usually use about 2, and it makes enough to feed us for about 4 meals)
            about 1 15 oz can of refried beans per pound of ground beef
            Shredded cheese
            cumin, chili powder, paprika, black pepper, salt, garlic, onion to taste

            Cook the ground beef and drain. Add seasonings, about 1/2 cup of liquid (use the defatted liquid from cooking the beef or beef stock or water), cook over low heat for about 10 minutes to allow the seasonings to hydrate. Mix in refried beans and about 1/2 your shredded cheese. Cover and cook for about another 10 minutes, remove from heat and top with the remainder of your cheese. Let sit, then serve with tortillas, tostadas, corn chips and condiments/toppings to taste.

              I like what I call "White trash goulash"
              1 lb. ground beef
              1 c. chopped onion
              1 clove garlic, minced
              1 Tbs. paprika
              1 tsp. salt
              pinch of cayenne
              1 (15oz) can tomato sauce
              2 c. elbow macaroni
              1 c. sour cream
              Cook and drain mac. Brown beef and onion - drain. Mix all the ingredients together. Pour into casserole dish. Bake at 350 for 30 minutes.
              I serve it with a salad on the side.

              I love this stuff - even on days when I don't want to eat - I'll eat this for sure!

                Big can of cream of mushroom soup and a package of noodles. Makes a beef stroganoff type thingie. My mother would always make it but it never really had a name.

                        I was going to suggest a similar recipe acquired from my DBIL, but he also adds sour cream. I throw in some garlic (as well as the sour cream).

                          Tacos, Chili, Sloppy joes, Hamberger helper mix?

                          Another thing my kids love is red beans and rice. I just brown a pound of ground beef and add it to the rice and beans while it cooks.

                          Cook ground beef and throw it in tomato sauce, serve over pasta.

                            I came up with a very delicious treat called ground beef hash. Very simple to make. Cook up a pan of hash browns, then after cooked set them off to the side. Cook up a pound of beef. When it's almost done add the hash browns. Really delicious. Goes great with fresh caught fish.
