  • Marking yogurt

    Making your own yogurt is very simple, heat milk and add a culture.

    It less expensive and you know what is in it.

    Keep everything very clean

    About 2 qts milk
    one container plain yogurt with live cultures
    bowl
    lid that fits bowl
    thermometer
    small pan of hot water

    The milk you use is up to you. I use 3.5% fat milk and and dont know how non-fat milk will turn out.

    Place yogurt culture on counter

    Heat milk to 180*F and hold there for 15 min. I use the microwave as it doesn't over heat the bottom of the bowl.

    Cool to 100*f as quickly as possible. I use a an ice water bath.

    The culture. You can get any live culture yogurt from the store or get an yogurt culture from on line. I have been buying plain yogurt and have good results.

    Mix culture in warm milk and cover with lid

    Put in oven with light on, place pan of water in ovenand shut door.

    Let set for 10 to 12 hours

    If you want more of a greek yogurt style, line a colander with coffee filters and pour yogurt in, cover and let drain for 1/2 to 1 hour. Use the whey in soup or bread.

    Place in refrigerator and enjoy

      Your gut is lined with bacteria, fungi and other symbiotic organisms.
      Your skin is covered with ditto.
      Your mouth is filled with the above. So are your lungs, so is the surface of your eyes, the insides of your ears.

      Bacteria are not all the same. Most are neutral to us. Some are essential to us. Gut bacteria digest things we can't, and provide us with the parts that are nutrients to us while taking the things that are nutrients to them. Skin bacteria are part of our defensive systems; or help keep the surface of the skin healthy.
      And then there's the very, very tiny minority of bacteria that make us sick.

      The cultures used to make yoghurt predigest some of the parts of the milk that we humans can't digest; thus plain yoghurt is actually a more nutrient-rich form of dairy (for humans) than plain milk.
      If you were a calf, however, you'd do better with the milk.
