A few weeks ago, I asked for advice for making a smooth and perfect chocolate mousse. Last night, I tried my hand at it again. The meringue and whipped cream were easy, and then when the chocolate was melted, I slowly spooned it into the mix, letting each spoonful cool slightly, and it turned out perfectly! I even made my raspberry coulis correctly, even though I don't have a chenois. I was thoroughly pleased!
