    I'm making a cake for a friends birthday, and I'd like to make the frosting too, but I don't really like most of the frosting recipes I've tried.

    The cake will be chocolate, and I'd like a vanilla frosting, but am willing to listen to other ideas.

    My friends like my buttercream icing:

    1/2 cup butter or margarine
    1/2 cup shortening
    powdered sugar
    milk

    Mix the butter and shortening till they're blended evenly (helps if the butter is soft first), then begin adding the sugar. Mix in sugar until the mixture is slightly crumbly, then add approximately 2 tbsp of milk (more or less to suit).

      Or you could make a simple white chocolate ganoche (heat the heavy cream, melt the choco into the cream, stir, etc) and spread on the cake. Here is Altons recipe for Ganache Frosting http://www.foodnetwork.com/recipes/a...ipe/index.html

      If you wanted white, I would just substitue white chocolate instead of the bitter sweet (dunno how it would taste though LOL.

        Here's my standard buttercream. I prefer it because it doesn't have the shortening, and it's more cream than butter - so it's a bit smoother and richer, without being overwhelmingly sweet. It's originally my mom's, but I think she got it from The Joy of Cooking.

        ¼ cup of butter

        1 lb confectioners (3 ½ cups)

        ¼ tsp salt

        4-5 Tbls heavy cream

        1 tsp vanilla



        Cream butter, add about 1 cup of sugar and salt and cream well. Add remaining sugar alternately with cream, using enough cream to give a light gloss and good spreading. Add vanilla

          This is my favorite, super-simple recipe ever; everyone always loves it. Make sure to beat it a long time so it turns fluffy!

          1 stick butter (unsalted and softened)
          3 cups sifted powdered sugar (sifting is a must)

          Mix those together. Then add 2 tbsp of milk and 1/2 tsp of vanilla. You can add more milk until you get the desired consistency.

          It should turn out snow-white, so you can dye it any color you want!
