Vegetable sandwich?

  • Vegetable sandwich?

    Okay, I know we have a lot of people who are just awesome in the kitchen on this board, so I'm making a plea to save my lunches.

    Sandwich meant kinda grosses me out, so I've been sticking mostly to PB & J when I make a sandwich. However, even mixing it up by having non-sandwich lunches a couple times a week, those sandwiches start to get old. So I'm hoping someone has a recipe for a decent sandwich that doesn't use sandwich meat. A type of meat other than sandwich meat, I suppose would be acceptable, though veggie sandwiches seems the likeliest solution. I'd prefer they're kept relatively simple (if it requires juilenne, frenching, or something like that, you're WAY over my abilities), and economical (since that's half the reason I bring lunch ). I'm willing to experiment, but I've got one rule:

    No Peppers. Of any kind. I'm allergic. No table pepper, no bell peppers, no jalapeƱos. Nuthin.

    So fine foodsmiths of CS, whatcha got for me to try out?

    Oh of course I start thinking I know the perfect one but then your allergic to the first ingredient in the recipe.

      Do you like liverwurst? I don't consider it "typical" sandwich meat. Liverwurst, mayo (I love mayo), and red onion. I like that.

      I also like Peanut butter & banana sandwiches. Then there's the variation of Peanut Butter, Mayo, and Banana. Or you can put PB, Mayo, and lettuce on it.

      I also like pita bread (the small rounds) and add humus to the top of them, along with either sliced tomato or cucumber. It's a little bland if you get the original hummus flavor, the roasted garlic is good. (I also add black pepper on top of the tomato/cucumber, but that's not an option as you're allergic to it).

      How about some sprouts, tomatoes and lettuce sandwich?

      I'm odd in the way i like very simple sandwiches. A Mayo & Lettuce sandwich is good enough for me. Maybe even add a slice of cheese to it.

      Everything, in my opinion tastes better with cheese, especially if that cheese is either Muenster, Colby Jack, Provolone or Cheddar.

      But then again, as I said before ... I'm odd.

        Yep. That pepper allergy's a real kick in the ass. Makes it hard to buy anything pre-made, too. You would not *believe* how many places include red peppers in their frozen dinners and such.

          Don't think I've ever had liverwurst. I'll see if I can pick up a small amount when I go grocery shopping today.

          Wasn't a fan of humus. Texture was odd. But that was plain, as well. Other types might be better. I'll try that too.

          Different cheeses didn't even occur to me *facepalm*

          As for sprouts... brussel sprouts? seem kinda big for a sandwich.

          I've tried lettuce sandwiches before. I'm always hungry about 20 minutes later.

            Alfalfa or broccoli sprouts. You can find them in the produce section.

            As for liverwurst, the best brands are: Kahns or John Morrel. You can find them where the pre-packaged sandwich meats are. (Like where you find the Oscar Mayer and stuff like that). Johnsonville or Jones (it starts with a "J", I know that) isn't very good - it tastes greasy. But those are my most humble opinions, so you can tell me I'm crazy or whatever.

            As I said before: Lettuce and cheese. Lettuce, cheese, and tomatoes. Hmmm ... Maybe some eggplant? How about spinach leaves instead of lettuce. And romaine lettuce or another really leafy (not just iceberg) lettuce to go on the sandwiches.

            And I don't know if you consider salami as a "regular" sandwich meat, but that's good too. Added with provolone ... Yummy! But ... Salami might be peppery ... You'd have to check the description/ingredients on that one. The only reason I mention it is because my husband has been known to make a peanut butter and strawberry jelly sandwich and then add salami to the middle of it.

            I know ... I know .. but I married the guy before I found out his peculiarities about food!

              idrinkarum is probably referring to alfalfa and/or mung bean sprouts, not bonsai cabbages.

                You are right dalesys! However, I think I'll start calling them Barbie cabbages from now on. Might be able to convince Child Rum to start eating them.

                  what about mushrooms? Like portabellos?

                  zucchii might also be cood. Cucumbers?
                  Coffee should be strong, black and chewy! It should strip paint and frighten small children.

                      I have two sandwiches I make on a regular basis. Mom and sister are allergic to bell peppers, my aunt is allergic to hot peppers, so I've adapted everything I make for non-pepper eaters.

                      1. Pita pocket. Spread mustard of your preference inside. Add three cheeses (I prefer ex. sharp/seriously sharp Cabot cheddar, fontina, and either feta or parmesan, but it's up to you). Toast briefly, to melt the cheese and give a touch of crispiness to the bread. Add mustard greens, various grilled veggies (or roasted, if you don't have a grill) like zucchini, carrots, corn, eggplant, and other squash-type things, and finish off with a pinch of alfalfa sprouts. Tasty, not necessarily fast, but the elements can be done over a weekend, then pulled out of the fridge for assembly in the morning. If you throw it in the microwave at work, it's all gooey and tasty. This is fantastic in the fall.

                      2. Start with whole wheat bread. Add baba ghanoush. Layer on different mixed greens, with tomato, cucumber (I use peppers cause I hate cucumber, but either one works), grilled/roasted Portabella mushroom, and a couple slices of Munster cheese. Fontina works too, but I don't like the mildness of it as much on this one. It's a good light summer sandwich.

                      3. Fruit salad with yoghurt. You'd be amazed what a wonderful summer lunch this is. Especially now that the blueberries are out. Mmmm...wild blueberries.

                        Make some toast. Slice up a fresh tomato on top of it, then a few slices of cheddar cheese. Stick in toaster oven or under a broiler till cheeze browns a little .

                        Slather with Duke's Mayo and salt.

                        Just about my favorite sammich.

                          How about egg salad? It's really easy and I love it. Boil some eggs (when my mom makes it, she uses 6-7, but that's usually for 3 people so you might want to start with 2-3 to see if you like it), chop them fine, add mayo and a little yellow mustard to taste, to form sort of a paste. We always had it with lettuce on buns or toast. You can add other stuff to it, too, if you'd like, like celery salt or garlic powder or paprika to give it extra flavor.

                          Tuna salad is good too. A can or two of tuna, mayo, and pickle relish. I like sweet pickle relish but it's traditionally done with dill relish. Not too much relish, either, or it will overpower the flavor of the tuna.

                          Another good one is chicken salad. You can buy cans of cooked chicken in the same area you get canned tuna (it even looks like canned tuna when you open it.) Add mayo and/or mustard, some diced onion and celery or peas if you like.

                          With all of these, I'm sure you can substitute other kinds of dressing if you don't like mayo, but that's what I always use. And add veggies as you like. Like I said, lettuce is really good with egg salad. Tomato probably would be too, but I only like tomato in very small quantities.

                          PS: Another good peanut butter sandwich that I don't see getting mentioned often is peanut butter and honey.

                            Sounds good, but I dunno how well that'd travel. Might just make it for supper or breakfast though!

                            Way... WAY too complicated. I have not the technical abilities to properly roast veggies (since I don't have a grill), and considering I live alone, I'd never work my way through the ingredients before they'd gone off.

                              my mom is fond of banana slices and mayo with lettuce. Then again, my mom loves iceberg lettuce.. lots and lots and lots of it. umm.. I like taking tortillas and wrapping up shredded cheese and a little leftover jarred/canned pasta sauce and melting that up all by itself, but I'm very fond of cheese
                              Oh! And romaine lettuce, with tomato, mayo, and a little salt.
                              My hubby chops up hot dogs and puts them with a ton of shredded cheese on a tortilla and makes hot dog burritos
