So, today is my cousin's birthday, and he requested I make him a cake. Specifically, a chai cake with honey ginger ginger cream that I found a recipe for online while looking for something else a few months ago.

Cake just went in the oven, and I took a lick of the batter.

Oh, holy wow. Best cake ever. I used to think it was the white chocolate orange cake, or a really good carrot, but this cake is the new favorite, and I haven't even tried the icing yet.

OK, this cake is amazing. It is absolutely delicious.

I can't wait to tweak the recipe.

First, I'm going to steep the teabags a lot longer.

Secondly, that is a lot of cake. I'll probably halve the recipe.

Thirdly, while the icing is delicious, the cake is just about perfect by itself. So, instead, I'm going to add little pieces of candied ginger to the batter, and top it with just a little bit of honey with more ginger in it.
