  • Cooking advice...

This weekend in leiu of gaming we're doing a potluck movie night at my house, and my friend is going his 5 alarm chili (8 haberno peppers minimum in the chili).

I wanted to make my mom's white chili, but she can't find her recipe, and can't remember it.

Can anyone help me out here?
It is by snark alone I set my mind in motion. It is by the juice of the coffee bean that thoughts acquire 'tude, the lips acquire mouthiness, the glares become a warning.

Food Network has over 600 listings for that--surely you can find one that's close or call your mom for it.
I'm trying to see things from your point of view, but I can't get my head that far up my keister!

I would guess you need small white beans, chicken, jalapenos, garlic, onion, white pepper to start.

        From the Betty Crocker Cookbook:

        1 tbsp vegetable oil
2 medium onions, chopped (1 cup)
        2 cloves garlic, finely chopped
        3 cups chicken broth
        2 tbsp chopped fresh cilantro
        2 tbsp lime juice
        1 tsp ground cumin
        1/2 tsp dried oregano leaves
1/4 tsp red pepper sauce (Tabasco or similar)
        1/4 tsp salt
1 (11 oz) can white shoepeg corn or whole kernel corn, drained
1 (15-16 oz.) can great northern beans, drained
1 (15-16 oz.) can butter beans, drained
2 cups chopped cooked chicken breast

        1. In 4 quart Dutch oven, heat oil over medium heat. Cook onions and garlic in oil 4 to 6 minutes, stirring occasionally until onions are tender.
        2. Stir in remaining ingredients except chicken. Heat to boiling, reduce heat. Simmer uncovered 20 minutes. Stir in chicken, simmer about 5 minutes or until hot. Serve.

I don't think my white turkey chili qualifies as real chili, but I really like it!

          In a giant skillet:

          Brown 1-1/2lbs of ground turkey
add two chopped onions and a mess of garlic. cook until soft.
          drain off excess fat
add two cans of white northern beans or canelinni beans and a bag of frozen corn
          heat through
          add one quart chicken broth
add the contents of your spice cupboard (I use salt, pepper, various spicy things, chili powder, cumin, etc)
simmer for awhile to develop the flavors and reduce the broth a bit
mix a little cornstarch into some half and half and add to thicken.
          done!

It's smooth and spicy and creamy and beany! It also only takes about 40 minutes to make, and can be transferred to a slow cooker to stay hot.

That turkey chili sounds really good, CoffeeMonkey, thanks for posting the recipe. I showed it to my husband and here was our conversation:

Him: Might be good, although those instructions seem pretty vague to me.
Me: They make perfect sense to me.
Him: It's like, "Cook some meat, then add some vegetables, and toss in some spices, too, and then cook some more, and now you're done!"
Me: Exactly! That's how I do basically every other meal that we eat!

I really like ground turkey so I'll definitely be giving this one a try sometime!

I was in a chili cookoff a while back (second place, thank you very much), and while I went traditional (not white), when I was searching for some recipe suggestions (I knew what I wanted to do, was just looking for some tweaks), I found some very interesting recipes, many for white chili. Some for seafood white chili, which intrigued me. My suggestion: google is your friend. Seriously. Whenever I need to find recipes or stuff like that, I google what I need, and find numerous cooking and recipe sites that lend me invaluable information and resources. If I were you, I would google, in quotes, "white chili recipe."

Now, if what you are trying to do is to figure out exactly how to make your mother's white chili without having the recipe in hand....well, that is bordering on impossible. I would suggest you, your mom, and your favorite psychic gather in the kitchen and try to muddle through it. Personally, I think google is a better bet.
