I made the brine for my turkey yesterday. It's my first time brining a bird!
I used mostly water, with salt and brown sugar, then added about 2 cups of orange juice, some sage and rosemary, a bit of garlic, and then floated some orange wedges in it and stuck it in the fridge to cool.
I'll stick it in the brine tonight and let it soak overnight. Then tomorrow, I'm cooking the stuffing seperately, and stuffing the bird with a clove orange and shallots. I'll cover the turkey with orange slices and pour some white wine over it, along with some chicken broth, and baste it from time to time.
I expect it to be f'ing delicious.
My friends and I always do Thanksgiving together, and divide up the costs/labor:
Rachel and Tim make the sides, John and Marcy make the gravy and bring bread, and I cook the turkey because the other two are too nervous!
I'm beginning to nail down my own traditions for the bird--it's fun!
