I'm brining the turkey for Thanksgiving overnight, and since I couldn't get it all covered at once, decided to wake up at 4am to turn it over. Everything went well....EXCEPT IT'S TWO HOURS LATER AND I CAN'T GET BACK TO SLEEP, ARGH!

Well, I remembered to reset my phone alarm last night so I wouldn't wake up at 6:25, but I did not think to turn off the alarm clock, or the timer on the lights, so I woke up to lights and music at 6:15...took me a bit to go back to sleep, then woke up at 10 to the phone alarm, with a sinus headache.

Well, the turkey is now in the oven, and looks great...but the button hasn't popped up yet.
I have decided to forgive the turkey, however, because there is a Mythbusters marathon on tv.
Whoops, as I typed this, the turkey cooked! Woot! It looks yummmmmmmmy.

That's because you trusted the pop up thermometer. Best approach is to get a probe thermometer and put it in the breast. (don't take out the pop-up one, but don't use it either)Quoth JoitheArtist View PostOk, so the bird was a little overcooked, but it tasted GREAT!! *happy*
Oh, also look up the Good Eats thanksgiving special. Lots of good advice there.

My fiance and I used to brine our turkeys too. We used the Alton Brown recipe, and a probe thermometer.Quoth JoitheArtist View PostOk, so the bird was a little overcooked, but it tasted GREAT!! *happy*
Never could get the placing of the thermometer correct, and the last 3 turkeys were undercooked at the innermost part of the breast meat.
This year, we said screw it, and ordered Thanksgiving dinner from our favorite Cajun restaurant.
