  • I'm Making Duck

    ...Honey and Spice Duck to be exact. I have never made duck before... but MAN it is smelling good... and it still has two hours to cook! >< I'm hungry!

            Yeah, let us know how it comes out. I hear duck isn't easy to cook.

            Funny story - I was dating a Vietnamese girl for a few years and she still had a very heavy Vietnamese accent (she was in the US about 3 years at the time). With the accent, CK can sound a lot like G and they pronounce "U" differently.

            She called me up one morning and asked me if I liked duck.

            I was still half asleep and asked her to repeat herself, I wasn't sure what she said.

            She asked "Do you like duck?"

            What??

            (Repeat for a few minutes)

            Her: Remember the other day, we went to the lake and the birds in the water?

            Me: OH!!! DUCK!!!

            Her: Yes! What do you think I was saying?

            Me: I thought you were saying dog!!

            Of course, for the rest of the relationship neither her nor her family let me forget that (in a very humorous way). Yes, I was the subject of many jokes.

                    Well it turned out WONDERFUL! I cooked it a little too long so the glaze burned... but it still tasted wonderful, the skin was just crispy.

                    Here is the recipe. I used about an 8lb duck, so I doubled all the ingredients, and it was STILL almost not enough for the rub.

                    Enjoy!


                    Honey and Spice Duckling


                    ~ 1 3 to 5 lb duckling
                    ~ 2 tsp Szechwan pepper, coarsely ground, or 1 tsp whole pepper, coarsely ground
                    ~ 1 tsp salt
                    ~ 1 tsp ground ginger
                    ~ 1/2 tsp five spice powder
                    ~ 1/4 cup honey
                    ~ 2 tbs soy sauce

                    Rinse duck and pat dry.

                    In a bowl, combine pepper, salt, ginger, and five -spice powder.

                    Sprinkle body cavity of duck with some of the salt mixture; rub remaining mixture on the skin of the duck.

                    Skewer neck skin to back; tie legs to tail and twist wing tips under back. Prick skin all over with a fork.

                    Place duckling, breast side up, on a rack in a shallow roasting pan.

                    Roast in a 375 degree oven for 1-3/4 to 2-1/4 hours or until the drumsticks move easily in their sockets and the duck is no longer pink. Spoon off fat occasionally.

                    Meanwhile, mix the honey and the soy sauce together.

                    Baste duck with honey mixture once or twice during the last 10 minutes of roasting.

                    Serve and Enjoy.
