I made homemade red velvet cupcakes (using Paula Deen's recipe) and cream cheese frosting last week for Valentine's Day, and they turned out awesome, for my first attempt. I splashed a tiny bit of red gel food coloring around, but I'm none the worse for wear and I might actually make them again, since they were so damn tasty.
I'm on my last two, and I'm loath to toss them out, because what a waste of good cupcakes. They're covered up, they've been refrigerated. There should be nothing wrong with them, right?
