Need sausage recipe ideas....

  • Need sausage recipe ideas....

    So a while back while grocery shopping, saw a great deal on locally made sausage: 2 for 1. Each package was 2.5 pounds, so I got one of Hot Italian Sausage and one of Mild Italian Sausage. Brought them home and stuck them in the freezer until I figured out what to do with them.

    So....help me figure out what to do with them.

    The obvious choices are Sausage with Onions and Peppers, or Jambalaya. I am looking for additional ideas. Since I have two packages and they are different varieties, I figure I need at least two different recipes....but I would welcome more.

    So (double entendre mode set to "on"), what can you suggest I do with my sausage?

          Chances are, any recipe that calls for ground beef or pork can be used for sausage. Nevertheless, Mrs. TGK liked this bread pudding, and she is not wild about bread puddings in general.

                Our local Costco often has some really tasty sausage, and since we don't actually cook, we like to get a plain cheese frozen pizza and then add toppings, one of which is that sausage.

                      if you don't mind baking, i snagged a recipe from a magazine a while back. then altered the hell out of it to make it better.

                      ~brown aprox 12 ounces (fully cooked) sausage in olive oil over medium-high heat.
                      ~take 16 to 18 ounces of uncooked tortellini and mix it with 2 cups marinara sauce (i used spaghetti sauce)
                      ~toss in sausage
                      ~transfer to shallow 2-quart baking dish and generously sprinkle with grated parmesan cheese. bake at 375° f until golden and bubbling, about 35-40 minutes

                      it's pretty delish. here's the original recipe if anyone's curious

                        I read the first line, and almost didn't read the rest. After all, I am famous for saying, "I don't bake--I cook." But what you described isn't baking. It's cooking in an oven. Baking is when you bake desserts, pastries, bread...you know, cooking stuff where you have to measure exactly!

                          Otherwise, how about stuffing (who says you can only have it for Thanksgiving/Christmas?) or just browning some up with eggs/pancakes/oatmeal/etc for breakfast?

                          Speaking of breakfast, you could make a breakfast casserole.

                          Spray a 9x13" pan with non-stick spray. Place a layer of cubed bread, or croutons, or frozen hashbrowns/tatertots on the bottom of the pan. Whisk together 6-8 eggs, any veggies you like, some cheese, and a bunch of browned sausage (and/or bacon or ham.) Pour on top of bread/potatoes and bake until heated through!

                          There are lots of variations of this, if you want an actual recipe, just google "breakfast casserole" or search for it on allrecipes.com.

                              As do I. I use a nice spicy, smokey chorizo in my chili. Always have. And I've been working a lot on chili recipes lately, and eating a lot of chili, so I am angling for something different.

                              Had an idea at work the other day, and reviewing some possible recipes online for ideas on how to do it...specifically, the mild Italian sausage with a beer mustard sauce served with rice.
