Making a Kansas City Style bbq sauce tonight. So far, so good. Hope a thickens a bit more, though.

I found the offshoot brand of Kraft (cant remember it) makes a really great "KC Style" bbq sauce. No High fructose corn syrup either. It was the only one without it.Thou shalt not take the name of thy goddess Whiskey in vain.

Well....
2 cloves of garlic
1 big can of tomato sauce
1/2 cup of 3 pepper vinegar
1/2 cup of water
2 cups of brown sugar
salt, pepper, red pepper to taste
Brown garlic in a saucepan then add all other ingredients. Cook for 15 minutes until thickened.
I have to tweak it some. It's not thickened as much as I want. Hopefully, it'll thicken some when it cools (doubt it).I have a...thing. Wanna see it?

where do you get "3 pepper vinegar"? Ive never heard of it. You could try throwing a bit of flour in it if it doesnt thicken up the way you like.Quoth Nurian View PostWell....

Vinegar that has had peppers suspended in it for over a year. A friend gave me a bottle.
As for flour... nah, not this time. It'll burn off nicely when I cook with it

Cook it more so it reduces more, thus thickening it and concentrating the flavors,
OR
Add a small can of tomato paste to it. Thickens it without taking any of the tomato base taste from it or adding clumps as flour might.
Impressed that you are making a barbecue sauce without ketchup. Props to you.
(For the record, the only use I can ever think of for ketchup is as a sauce base, as I really don't care for the stuff myself. That being said, I have never actually used it as a sauce base. I also have never made my own barbecue sauce. Yet.)
Edited to Add: Or next time, if you want it thicker, use more tomato sauce or less (or no) water.

was it a 28oz can or a 14? as was stated tomato paste will help thicken, adding a little molasses would help too halve your sugar and then use about 2/3 the amount of molassesQuoth Nurian View Post1 big can of tomato sauce

If it's what I think it is, pepper vinegar (aka pepper sauce) is widely available, in the South at least. (We use it to sprinkle on greens.) I think the same folks that make Tabasco makes it...I'll have to check on that.

Thanks for all the suggestions guys. I think the tomato paste is what this batch lacked. Maybe a small can.
The can of tomato sauce was a 29oz can. I wanted to make a large batch this time.
I won't call this a failure. Far from it. Despite being watery, it's got a LOT of flavor with some heat just behind it. I have a feeling I'm going to have fun tweaking this
