  • Breaded Zucchini

    So, we have the usual amount of zucchini (no, we don't grow it, but I know someone who does, and had a bit much already). I wanted to try breading it, and I've found some recipes I like. I need to know though: do the oven-baked recipes work? Currently I'm torn between making oven-baked ones with seasoned breading, making ones in plain breading and frying them in the leftover falafel oil, and making ones in seasoned breading and creating more flavoured oil from frying.

      I LOVE zucchini (often put it in my monstrously large salads), and recently had fried zucchini for the first time in years, at a great barbecue place up the Keys.

      I definitely vote for frying it!

        I ended up frying it, it turned out well. I just made far too much. We're going to try to revive it over the barbecue tomorrow. (The picture for the oven-baked recipe didn't look like it was cooked well enough to be soft and squishy like we wanted). We had it with gado-gado for dinner (millet instead of rice in the interests of using leftovers).

          I've made breaded zucchini before. I roll the slices into breadcrumbs and bake them in the toaster oven on a tray at 450° for about 10-15 minutes.

            You might want to ask your grower friend for the zucchini blossoms as well. They are very good lightly egged and floured then fried. My mom was raving about them once I mentioned I was doing tech-for-veggies at a farm.

              I like it with either tempura batter or egged and breaded with a mixture of cracker crumbs, Italian seasoning, and parmesan. The latter is good with ranch dressing.

                I just buy breadcrumbs at Aldi. The Italian ones are better for frying zucchini, IMO. I usually add a bit of parmesean to the mix as well. Try dipping them in marinara sauce. I like 'em best when they're sliced really thin so they get really crispy. Om nom nom.

                Another great zucchini recipie is to marinate them in Italian salad dressing for a few hours and then toss them on the grill for 3-5 minutes per side or until the skins get nice and black and crispy.

                  If you or your supplier have a lot of zucchini, try making bread, muffins, brownies, and cupcakes with it too. I have a recipe for a relatively healthy chocolate zucchini cupcake that tastes pretty dang good considering they're pretty low fat and low calorie.

                    Hmmmm....never had breaded zucchini before. I do love zucchini bread, though. *nom* Probably not anywhere near the same thing. XD

                      Nope. Think deep fried zucchini. it is SO awesome with a dilly ranch dressing. SO. GOOD.

                          Exactly! I told him that if he had any large ones, too large to sell well, I'd take them for zucchini bread. I came in to find a bag of five. And they're normal sized. He's getting a jar of peaches as a thank-you.

                          And I've heard good things about the blossoms, but I can't really ask him for them - thses are extras, those are potentially cutting into sales.
