Two things I know to do with apples. Peel em and eat em.

I'll ask the wife if she has any, though.

Thanks. These are the large green slightly sour ones so you couldn't eat them raw.

        Apple dumplings!!!

        I miss apple dumplings...

Also, I like to make my own applesauce. I'll see if I can hunt up the recipes if either of those sound appealing to you.

Roasted Pork Tenderloin with Apples & Onions

1 Pork Tenderloin (about 2-3 lbs)
                    3 Large Apples
                    2 Medium Onions
                    2 C Dried Cranberries
                    3.5 C Apple Cider Vinegar
                    1 C Apple Cider
Rosemary, Salt & Pepper to taste.

Soak the dried cranberries in the vinegar for an hour. Meanwhile, core and chunk the apples & onions. Put them in a roasting pan and put them under a broiler for a couple minutes to start browning. Remove and reserve the chunks. Rub the salt, pepper, and rosemary on the pork. Put the tenderloin in the roasting pan and set it on the stovetop to sear the sides. Add the chunks back in, plus the raisins & vinegar.

Put in a 370*F oven for 20 minutes, or until the pork is cooked. Remove the pork and set aside to rest. While the pork is resting, deglaze the pan with the apple cider, and stir around to get all the yummy goodness up. You don't want it to reduce too much, but a bit of caramelizing is good. Slice the pork and spoon the sauce mixture over it.

Serve with a glass of Montepulciano d'Abbruzo or warm apple cider and enjoy!

It's basically a layer of apples with cinnamon and sugar, topped with a crumble made with flour and oats and brown sugar, and baked. I have a recipe somewhere. But apparently not on my computer. Here's a similar one, though.

                        Pork recipe sounds great!

Applecrisp is what we call apple crumble then! Yay I learn another American word!

                          Apple Dumpling Recipe

                          Dumpling Ingredients:
1 package refrigerated pie crust (with 2 crusts, for a double layer pie - if you can make your own, you're WAY better than I am!)
6 large sour apples, peeled and cored (granny smith, for example)
1/2 cup butter, stick preferably, cut into small chunks
                          3/4 cup brown sugar
                          1 teaspoon ground cinnamon
                          1/2 teaspoon ground nutmeg

                          Vanilla sauce ingredients
                          3 cups water
                          2 cups sugar
1 teaspoon vanilla (pure is better than imitation!)

Preheat oven to 400 degrees F. (Quick Google conversion = 200 degrees C) Grease a large baking pan, (probably 9 x 13 inches)

On a lightly floured surface, roll pie crust into a large rectangle, then cut into 6 squares. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.

Dampen your fingertips for this step, it helps seal the pastry. Bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together with damp fingertips. Bring up the two remaining corners, and seal. Pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.

In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.

Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some of the sauce over it. Serve warm. Tastes great with fresh whipped cream or vanilla ice cream. Enjoy!!
