The other night, I made lasagne stuffed bell peppers. Make your lasagne mince. Make a little white sauce. Lop the top off the peppers, roast for about minutes. Put in your mince, drizzle the white sauce on top, add cheese, then roast till the cheese is melted. Nom.
I've made mac and cheese before and put various roasted squash right in the sauce with the cheese. It is DELICIOUS. I've never tried pumpkin but I have used butternut and acorn squash, both are good.
