Has anyone ever made Gammon?

  • Has anyone ever made Gammon?

    I have a gammon sitting in my fridge to make for Christmas lunch - any advise please?
    I know I need to use cloves - I only have the powdered version, would that work ok?

    I like using ginger, brown sugar, cloves, allspice. I think it gives the ham a christmasy sort of flavor. then again i like to experiment with spices.

      I wouldn't use powdered cloves if there was any chance of going and getting some whole ones.

      Personally, i'd cook the ham in cherry coke, then glaze it with cherry jam and stud it with whole cloves, and finish it off in the oven. You could add some of your powdered cloves to the jam when you heat it up, and maybe a bit of cinnamon, or ground ginger as well.

        I adore gammon, but never made it before. There's a recipe on the wrapping, but it sounds...weird...like you put it in an oven dish with water, carrots, celery, onions, 5 cloves and cook it for about 2 hours, then peel off the skin, score the fat, do the glaze (sorry, I cheated and bought it ready made! I'm also making turkey, roast potatoes AND dessert!), and bam! you have gammon. But the celery and carrot thing made me go huh??

              The water/celery/carrots etc help pull the excess salt out of the ham, and impart a bit extra flavor. My Mom always does it this way, as she and I are particularly sensitive to sodium. We then score it, and put cloves, pineapple rings and cherries on it before giving it a good bake. Delicious especially as you said the next day in sandwiches and fried up in a hash!!

                aaaaaaaaaaaaah when explained like that, it makes sense!
                Now, to find cloves...I might have to leave the pineapple rings off. TTO grew up on a pineapple farm and as a result, he's a bit sick of pineapple.

                  but every time i see this thread I think of the tauren in Org. Since the expansion he is laying the smack done on players, finally getting back at all the players that used to take him out prior to the expansion



                  That does sound like a very yummy dish. And I would think if you have a bone in the meat you could make soup with it.
