So, what you're looking for is food to keep in your office in excess of several days, not just 'today's food.' -- or are you looking for food you can grab once you get that 8-am-not-sure-if-I'll-be-back-before-3 assignment? 'Cuz if it's the latter, fruits like citrus, apples, pears, etc. don't spoil in the car/don't need refrigeration, just a wash, but should be eaten in a few days/when ripe. (But you probably already know that.) Veggies... not so much. You could get sealed dressings (they vary in quality and expense) for dipping your veggies in, and just keep those at the office that way you just have to worry about the carrots or radishes... you could start growing your own there in a little window box, just keep replanting at random that way you can eat a few every day, much healthier than none at all... and you are eating healthy stuff, which is good-- just not constantly, which it sounds you want that.
soda, unhealthy stuff, is okay once in a while... just not like five sodas and three cans of hormel in a day.

I've found a reciepe for homemade hotpockets that look really good.

The pocket part of it was the set reciepe, but it left it open for the fillings.

ham and cheese, philly cheese, veggie, pepperoni and cheese, anything that you want. and it makes up to 16 decent sized ones.

I don't want to get into fratching but there is a lot of concern over where those are made and the quality / true healthiness of them
well having spent the last four years in the food safety industry, and actually knowing the certifications* they have(and what it takes to get and keep them)....I buy them all the time, as does my mother.

funny thing about the confidentiality agreements we signed, we can't say who we test for, but we are perfectly free to give our "personal opinions" on different products.

*ISO 9001 certified, HACCP certified, CIQ inspected, OHSMS8001 certified, and Disney Food Safety approved.
Honestly.... the image of that in my head made me go "AWESOME!"..... and then I remembered I am terribly strange.-Red dazes

What about tuna and crackers? I usually add mayo to mine, but if you're watching calories, surely there are other things you can mix with it.

! Mayo does stay good when sealed, as does tuna! Brilliant!

Fiber One bars are my go-to. Same thing with the Atkins shakes.

Fiber One has yummy 90-calorie brownies that don't taste low-calorie.

The regular bars are great if you can eat one and drink a 16oz bottle of water with it. It keeps my hunger away for about 2 hours.

You said you have a dehydrator, do you do veggies in it? I keep a bag of Just Veggies in my office to snack on and to throw into a soup/Ramen/instant pasta type lunch. Pricey, they go to a long way though.

Other snack ideas...light microwave popcorn, veggie chips, flavored mini rice cakes, larabars, roasted chickpeas or edamame?

Do you like Indian food? The Tasty Bite pouches are pretty good and it isn't watery soup with pasta, or beans, or just pasta pasta pasta. Blech. Anyway they run about 3$/pouch on Amazon for a 2 serving pouch.

OK, I somehow missed the response you posted about not being in the office. My advice is to get a cooler-type lunchbag and bring a lunch every day--something like a sammich that doesn't need cooking. If you do have to leave, you can just grab the bag and take it in the car. http://www.amazon.com/gp/aw/d/B0013NHRKY/188-0302309-9292706 This is exactly what I have and I love it.
