I don't think Bethesda intended anyone to use more than one crafting skill at a time, but ingredients are so abundant and the skills useful even without perks that there's no reason not too try and use all three. But then you level yourself up too fast and all of a sudden are being devoured by raging sky demons you're not prepared to fight. It's even worse if you weren't intending to invest a ton of perks in the crafting skills, as then you don't have fantabulous gear to offset your lack of combat skills.
Honestly, Smithing was the biggest mistake I made on my first character. I was only using it to improve weapons ( wasn't going to waist 6-7 perk points in it ) with a bit of Enchanting on the side, but it still shot up really fast just with mats I had looted ( not even went out of my way to mine ) and leveled me faster than I wanted. Felt like I had skipped part of the game and was suddenly in over my head. Mobs were *destroying* me as my defensive skills were still 5 or 6 levels back.
Plus, you can craft the best stuff in the game and do so far too easily which, for me anyway, makes the game no fun anymore as you're overpowered and there's no longer any point in treasure hunting.
