Two things:
1. Muscle burns fat. If the extra weight is fat, building back your old muscle will help get rid of it.
2. Everything I've read says that eating just one big meal a day fucks with your metabolism, it's much better for you to space that food evenly throughout your day. I'd try eating a smaller meal before work and packing food with you for your breaks.
