Been craving it ever since I posted the other recipes. And I have one lone eggplant left in my fridge, just BEGGING to be made into hummus!
      OH me to me too I has an eggplant...

      I did the roasted red pepper one too and it was yummy...both batches were cleaned up within like a couple of hours, no leftovers lol.

        how about eating liver in the form of something else, like dumplings in soup? Something else that a lot of recipes for liver never mention is to soak the liver in milk and make sure there are no blood clots - blood is a main component in the 'livery' taste. The nice thing about the dumplings [and make them small, like for italian wedding soup, not the huge german style ones that you have to cut into lots of pieces to eat] is you can avoid the texture because it is blended with breadcrumbs - which totally changes the mouthfeel.

          Roasted Eggplant Hummus
          2 cups canned garbanzo beans, drained
          1 small eggplant
          1/3 cup tahini
          2 tablespoons lemon juice
          1 teaspoon salt
          2 cloves garlic, halved
          1/2 tsp cumin
          1/2 cup olive oil
          1/2 tsp salt
          1 sprig parsley, finely chopped


          Trim ends off of the eggplant, and cut into slices about 1/8 inch thick. rub with olive oil and lightly salt each side. Place under a broiler about 2-3 minutes per side, being careful not to burn the poor eggplant. Remove and let cool slightly

          Blend the beans into a paste in a food processor while the eggplant roasts. Add tahini, lemon juice, garlic, most of the parsley and cumin and blend some more until it's all nice and smooth. Remove and place in a bowl/serving dish. Garnish with the rest of the parsley. Chill for an hour. 30 minutes at least if you can't wait that long. Eat. Enjoy





          And bonus, I found another hummus recipe I haven't made in forever!!

          Tomato basil hummus
          2 cups canned garbanzo beans, drained
          1/3 cup tahini
          2 tablespoons lemon juice
          1 teaspoon salt
          2 cloves garlic, halved
          2 tablespoon olive oil
          1 can whole fire roasted tomatoes (15 oz) drained
          1/4 teaspoon cumin
          1/2 teaspoon salt
          2 1/2 tablespoons fresh basil, chopped

          Throw it all in a food processor. Blend until smooth. This one MUST be refrigerated at least an hour, it tastes SO much better that way. just saying.

            I was always under the impression 8-10 glasses was for physically active people (like the folks in the "Getting in shape" thread. I can easily drink 40 ounces of water after leaving the gym. If I don't drink soda I'd say I drink more than 64 ounces of water in a day.

            I guess I'm just super thirsty.

                  lol!! You're welcome!! I'm making a batch myself later today.


                  so, went back to the donation center today, in the hopes of being able to donate.

                  My iron still isn't high enough to donate, but good news is I got it up to 36 from 30. Not too bad for a week. I'm going to wait another couple of weeks and try again. I was told by a pharmacist that I should try something like pre-natal vitamins, which do have a lot of iron, but are a lot more gentle. (Think it was mentioned in this thread, too!) So, on my next paycheck I'll probably give those a try. Until then...keep eating foods that are good sources of iron. The lady at the donor center who ran my test told me I should try red wine. I laughed and said I don't think my boss would appreciate the new addition to my lunch box, but it's still a thought.

                  <sigh> I also went grocery shopping. TERROR. Will post about it after I lay down for a bit. The excursion exhausted me!

                  Again, not too bad, getting it up 6% in just a week.

                  ETA: I need to be at 38% to be able to donate. The nurse also told me that in hot weather like this, over the summertime, they get a lot of women with lower iron levels coming in and getting turned away, so apparently heat is a factor. Who knew? I didn't...

                    Good luck Lupo....I hope it works out. I didn't know heat was a factor either. it's not horribly hot here I guess, hovering between 80 and 85. But that is hotter than I like, and I wonder if that's not helping.

                    But for now I'm eating homemade hummus daily...yum Eating more red meat, taking iron pills and tolerating them fine etc etc etc. I wish there was a way I could test for iron myself without doing the whole dr office thing.

                    I still have extreme fatigue though....wonder when that goes away.

                      Have you considered going to a blood donation center? they have to test your heart rate, BP, and iron levels to make sure you qualify to donate. If you're lower than 38, they'll reject your attempt to donate, and you can ask on what grounds. Usually they'll tell you, that's how I found out my iron levels for the last 2 weeks.

                      Just a suggestion.

                        Then she'd have to donate. Well, not HAVE to, but itd look a bit rude to walk in, get your iron checked then be like "K guys, thaaaaanks, no blood for you bye"

                        speaking of donate.. i cant remember the date I'm supposed to go back. I got 1 gallon the last time I was there

                          I was going more off of the fact that if she's chronically anemic, her iron levels probably aren't up to donation level standards. guess it didn't come out right. I'm tired, and just got off work and yeah...

                            It's a thought but yeah it would be weird to test fine then be like...no don't wanna donate sorry .

                            The dr office is across the street so it's not that so much as scheduling I'd have to take time off work to get tested again.

                              Lupo....I know you said black beans, but I'd just like to point out that if you're making chili in a slow cooker, do NOT use raw kidney beans. Either use canned kidney beans or pre-cook the beans before adding them to the slow cooker (boil them for at least 10 minutes).

                              The reason is that kidney beans contain a toxin called phytohaemagglutinin that breaks down under high cooking temperatures, but can actually be made MORE dangerous by the relatively low temps of a slow cooker. It basically causes food poisoning; symptoms include severe vomiting and diarrhea.

                              You may already know this, but I wanted to let you know just in case.

                              Oh, and you can use diced or ground pork in chili as well. Delicious.
