I can tell you right now, low fat cheese tends to be highly unnatural, and doesn't melt right. http://lowfatcooking.about.com/od/faqs/f/cheese.htm This mentions a few that are naturally low fat, like goat cheese and such. Undoubtedly a more thorough internet search can dredge up better/more options.
Why does fat have to be so darn tasty?
So are you feeling any better? Last I read, you were just out of the hospital and not feeling well at all.

      Hi

Yes, thanks, feeling better, and should be back at work middle of next week after another checkup.Temperature has finally gone down for good (it was up and down) and I don't feel so dizzy now.

This I think is a wake up calland THIS TIME I REALLY HAVE TO follow a sensible diet.It will be difficult but I know you will all help.

And I MUST do a food logas well, that will help.

So if I can be terribly, terribly nosy-- wtf was going on??? It sounded scary and all sorts of dramatic...
of course, feel free to slap my inquiring internet tentacle and say "No! Bad Teh!" :roll"
And yes, very glad you're well enough to post, and even go back to work!

No, TBK, I don't mind you asking but I don't want this to turn into a sympathy fest for me, if you see what I mean. From what the doctor has told me, and what has been very worrying, this looks like a (very minor) heart problem. The ECG was all over the place as well.I really hope that doesn't come across all dramatic because it isn't how it's meant. I had a high temperature and was dizzy and nauseous and my blood pressure was very high.

I did have a pain in the chest but not dropping to the floor dying and clutching my chest, like in films, just a vague tightness. In fact it was so unnoteworthy I didn't think it was related, I knew I didn't have pneumonia or anything which could have caused it. I did have numbness in my arm but it was more like when you wake up aftersleeping on it. But my doctor says it could be heart related. On Tuesday I have to have some more ecgs done to see.

I certainly don't want that to happen again.

It sounded like a couple of things, like a low-grade heart attack, the flu, and random stuff. (The arm-thing sounds like what I hear about women and heart attacks.) I've heard so many stories about how small things like that get to be big things, or the doctors discover major arterial blockage and omg operate now! type stuff... and I'm pretty sure my mind can generate the drama!
Best of luck with the tests. I hope you don't get too many needles poked in you.

that is one of my favorite phrases did your doc tell you what percentage of your calories should come from fat? Stay away from eggs for a while, they're very high in cholesterol.

Why does fat have to be so darn tasty?
It's concentrated energy. Same with sugars.

Before modern agriculture and modern automation, most people struggled to get enough to eat, and did hard physical labour much of the time. This means that they had to get all the energy for the hard physical labour from what foods they could get their hands on.

All our recipes with lots of cream, lard, oil, honey, or sugar tend to date from that time.

Before agriculture at all, when we were hunter/gatherers, a cache of honey or the fat from a hibernating bear might make all the difference for surviving a winter. So evolution made us loooove the concentrated energy.

Don't worry, though. You can retune your taste buds, to a degree. Over time, you'll start to find things oversweet, or overly fatty.
                Seshat's self-help guide:
                1. Would you rather be right, or get the result you want?
                2. If you're consistently getting results you don't want, change what you do.
                3. Deal with the situation you have now, however it occurred.
                4. Accept the consequences of your decisions.

If someone made low fat medium sugar DAMN GOOD CHOCOLATE, I'd be in. IN a heart beat.

But sadly enough, I'm also overweight and my cholesterol isn't so happy either. I do eat lots of oat based things, and lots of high fiber.

look in fancy-dancy stores that sell super-organo-whatsits and strange supplements, they might have something in the way of chocolate that you'd like.

Well, they do make a no sugar chocolate that is very nice. And if you don't like the artificially sweetened stuff, semi sweet baking chocolate is good, too. The high cocoa dark chocolate stuff has a lot less sugar.

I bet if you knocked off the oat based stuff you're eating, your cholestrol would improve (I personally think we obsess too much over that, but whatever.).

I'm guessing that the "overweight" is muscle, from what I can tell of your exercise routine, Whiskeh. Also, I found a Kentucky bourbon cookbook.

Nah I still have a bit of chub left to go. But the pants that wouldnt fit are now too big, i dont have a single health issue I could prevent (asthma was a birth/mom was a smoker issue).

and when did oats become bad for cholesterol?????? Oats are wonderful for lowering cholesterol.
