    Tell him up front.
    That even works with children. My grandchildren was very picky eaters when they were small, and hated any vegetables, but pasta sauce with blended carrots, onions, tomatoes and garlic was fine and they even helped prepare it. Meatballs with mashed carrots and celery in them was ok too.
    Sauces can be made with lots of veggies as spices, and if he doesn't like them, he will still get a proper meal.

      which reminds me, i recently tried this "hidden veggie" pasta the other day. it claims to have a serving of veggies or something like that.

      it didn't taste bad. especially covered with tomato sauce. :-)

        *snip* Meatballs with mashed carrots and celery in them was ok too*snip*.
        This is what I do with my meatloaf. I add shredded carrot, diced onion, sometimes celery or peppers (but only in hubbys and bibbys). I also make meatloaf muffins so you can play with the add-ins a bit easier.

          He has to be eating some sort of vegetation (or maybe liver/kidneys); or at least taking a supplement. Otherwise he'd have scurvy.

          So expand on what he's eating now. If he eats a burger that has a lettuce leaf and a slice of tomato on it, add pickles or onion or something. One thing at a time...

          For me, a GREAT burger has:
          * fresh buns from a bakery
          * a beef patty with herbs and spices in it
          * lettuce
          * tomato
          * NO pickles (yuck); but the rest of the family has them
          * grated carrot
          * onion
          * beetroot (most likely tinned)
          * sometimes a ring of tinned pineapple
          * sometimes cucumber
          * possibly anything else we happen to have that needs using up
          * ... of anything that looked interesting in the greengrocer's.
          * sometimes bacon
          * sometimes a fried egg
          * barbeque sauce.

          Hmm. Eggplant might be good in a burger. Need to cook it properly to take the bitterness out, but .. hmmmmmm.....

            I have a hard time actually finding kale in the store, but just picked up a pack of organic baby greens, including kale and spinach. Baby greens taste better than mature ones and are more tender to the tooth. They make a good salad, but I think I will wilt them in a stir fry noodle dish. Greens aren't my favorite, but I'll eat the baby ones.

              I'm not into dark leafy greens, but they have a lot of valuable micronutrients. So I put up with them.

              Bag of mixed dark leafy greens, teaspoon of olive oil (essential fatty acids), assorted herbs at random from my collection (more micronutrients). Someone who likes it might add vinegar.

                I just had an idea: asparagus and greens frittata. I think I have some gruyere somewhere. And I know I have thyme, Italian cheeses, and onions.
