      A very special dinner of my quick and easy pasta with red meat sauce.

      No, not my signature red sauce that I've been developing for over 20 years. Just the quick one. But it was special, because it was served with beer....and I was not cooking for just one.

      I'll spare you the details about dessert, other than to say it was sweet.

      So, yeah, simple Christmas dinner, but one of the best ones I've had.

        I don't know about beachcombers but wassail is like a hot spiced cider. My recipe involves tea and pineapple juice as well. Non-alcoholic to start with, but quite spike-able.

          We don't really have 'recipes' so you may have to play with this but

          Trout stuffed mushroom caps:

          Mushrooms (we used mini bellas) peel and take the stem off
          Cut up the mushroom stems, the bottom of green onions (the white part) and some celery and fry in a pan with butter and a squashed piece of garlic - set aside
          Fry the mushrooms in the same pan, start with the top (so you can't see into them)
          Make the dressing - 2 egg yolks, the juice from 1/4 lemon and black pepper, beat the crap out of it, add a little canola oil as you go, keep adding oil and beating until it looks like dressing (it is basically just mayonnaise, you could probably use that if you keep it on hand)
          1/2 way through making the dressing flip the mushrooms in the pan and squeeze the rest of the lemon into them, when they are done put them on a baking tray with tinfoil
          Shred a smoked rainbow* trout fillet (or two if they are small) into the bowl with the fried veg, mix with dressing, fill the mushroom caps
          Sprinkle with grated cheese, bake for about ten minutes
          Scrape any extra fat gel off the inside of the skin and then slice, fry it in the pan until crispy
          When you take the mushrooms out of the oven sprinkle with the trout skin bits and a little parsley - voila!

          Makes about 10 serving of apps

          *Rainbow trout skin is easy to prepare and good to eat, if using other fish make sure you scale very well if you want the skin bits!*
          Pain and suffering are inevitable...misery is optional.

            This sounds amazing, NecessaryCatharsis. I love the options you get when you work with the whole fish rather than buying filets. I would totally love to try some trout skin!

              I made roast chicken with stuffing, mashed potatoes, and had yams and that was about it. Simple but good.

                My dad ordered a "quaduckant"--same concept as a turducken, but it's quail/duck/pheasant. It was really good; I'd never had pheasant before. Now I wish I'd taken some leftovers... Side dishes were rice and green beans; it was just 4 of us so nothing fancy (also, we got in a bit of a time crunch due to my aunt not planning things out properly with her ancient kitchen facilities).

                    I actually joked that I was having "turducken" for lunch on christmas day...just that it was already separated! (and missing the duck part...)

                      We had ham, green beans with almonds, acorn squash (which I had never he'd before- yum!), duchess potatoes, and various muffins. We also had a really nice Swiss wine.
