Yep. That pepper allergy's a real kick in the ass. Makes it hard to buy anything pre-made, too. You would not *believe* how many places include red peppers in their frozen dinners and such.

    Mushrooms are ick!
Finally someone to share my pain with. Lol. I can't have anything with peppers either, even if it was cooked with peppers and all the peppers are pulled out. Just the contact juice makes me horribly sick. Makes me so sad cause the Beau loves peppers and buys those frozen stir fry things... and I cant eat them no matter how good they smell I'll read the label and start getting excited and then...bam... last ingredient... red bell peppers. And mushroom are vile things.

I've always really loved a peanut butter and honey sammie when the pb&j just gets too boring. And a BLT is always an easy fix. You can even buy the microwave bacon. It doesn't taste quite as good as pan cooked, but it has less fat and only takes like 5 min to heat up. Add some nice crispy lettuce, some fresh tomato and some mayo and/or ranch. Its a yummy treat.
Easier still. Some mayo on bread, with nice crisp lettuce, tomato and a few slices of your fav cheese. Really good snack.

Get this: I can't have Subway any more, since they can't guarantee that green peppers weren't dropped in the lettuce at some point. This became an issue last time I was there. Grabbed a sub for breakfast, no green peppers in there, I'd be able to taste it. Had breathing issues until near lunch time.

I have found that baking bacon is much easier than pan cooking it, and tastes just as good (if not better.) Just line a cookie sheet with tin foil (make sure you turn the edges of the foil up if you don't have a cookie sheet with sides, like a jelly roll pan) and cook the bacon at 400 degrees for about 12 minutes. Clean up is really easy, just let the bacon grease cool in the tin foil for a bit, roll up the foil and throw away! Don't even have to wash the pan!

Thank you Broomjockey for putting this topic up!! I am getting great ideas. And who knew you could bake bacon. I was planning on doing baked potatos for dinner and I need bacon for them

We had some great ones at a restaurant not too long ago. They had chicken, broccli and a alfreod sauce over everything. I figure might be able to make a lunch kit so put everything together at work.

Do you ever cook chicken breasts for dinner?

Make more than what you'd eat in one shot, and take out the extra ckn breast...slice it up into finger width slices.

              Use tortillas to make wraps.

Put wee bit of thick salad dressing on one side of tort wrap. Put chicken in it. Lettuce, cheese, anything else you wanna throw in there. Baked bacon, why not?

roll it up into a roll, cut in half, you're done.

Tuna salad is good - tuna, mayo, CUT celery, dill or basil (pinches) in big bowl, mix til gloppy. Put into a container, and transport to work in your smaller container - will make sammich soggy.

Make big salads for yourself. Use canned beans to up the protein. (take can of beans, open can, rinse until there are no bubbles of beans..aka gas). Throw veggies in container together, toss bunch of beans onto salad. Add shredded cheese, you're good to go. (take the salad dressing in sep container, or use the ones in packets from fast food places).

              Hope this helps.

Err, and? A cheese and relish sandwich? I think that's been suggested, somewhere back there. Unless I'm missing something.

Peanut butter and marshmellow fluff sandwiches are good.

Pinwheels are great to make. You take flour tortilla shells and put any fixin's you want. Meat, cheese, veggies, sauces. Roll up the tortilla and cut into sections. Done right, they should look like pinwheels from the side. You can even put the sauce on the side and dip it instead of adding it to the rolls.

If you can handle it, butter and sugar sandwiches are great.

Bacon and cheese between toasted bread is good. You can even toss the sandwich in hte microwave for melty goodness.

BLT on a hoagie roll? (Not sure if this has been mentioned before) I know someone mentioned tuna salad, but chicken salad is tasty, too. pretty much any store bought meat can be made into a salad. Krab salad, chicken salad, tuna salad, salmon salad, etc.

Another good sammich on a hoagie roll is roma tomatoes, provolone cheese, lettuce. Add a little mayo and storebought pesto. Nummy. (I almost said homemade pesto, but in deference to your claim of lacking in culinary skills, I didn't.)

Or, microwave quesadillas. Bring the cheese and tortillas separately, nuke in microwave at lunch time, dip in salsa.

Will dig through my recipe books and get back to you.

Thank you I can cook well enough to feed myself basic items, but if it involves knives beyond "mangle" or any sort of "be careful to not overheat" type instructions, it's dangerous. I've the scars to prove the first, and had some carbonized items to prove the second.

Pesto sauce is easy, if you can work a food processor, I suppose. No chopping or heating required. Just drop in spinach. Add pine nuts. Drizzle in oil. Add parmesan cheese and let it whir in the food processor until it's a saucelike consistency.

Or, you know, hit the Italian aisle of a local grocery store, that works, too, if that's also beyond your skills. (Or, you know, if you don't have a food processor either.)

I know one of our local markets has pesto, hummus, baba ganoush, tzaziki, and all kinds of other fun sauces and salsas from local restaurants. That would really be the best way to go. Super fresh!

That similar to a blender at all? I got one of those.
