I like my eggs over easy, but not what my mom calls "snotty". I like the runny yolk, but the white has to be cooked through. I've come to order over medium and still sometimes get "snotty" whites. The idea of twice over easy sounds like it may work. I'll have to try that!

I'm incredibly picky about my fried eggs (I hate when the white gets those hard, chewy bits (read: I choke on said hard, chewy bits)), so I usually order them scrambled at restaurants too. I like soft yolk, cooked white. It doesn't matter to me if the yolk is gelled or runny, I just don't like the yolk cooked solid or the white runny. I usually order over-medium and get something within that range.
Gel yolks are tasty but I would worship the cook who can do it consistently on command. It seems like a really narrow range of temperature would be required, and a really short window of opportunity to get it out of the pan.

I like eggs a number of different ways, the most interesting way I like them would be to take my mom's silicon muffin baking dish, bake the eggs in the oven using cooking spray and the eat them with caeser salad dressing.

I'm not sure if it would be good or nasty, I'd have to just try it I guess. I've heard of the baked in the oven idea before though.

Leftover rice, spinach, butter in bottom of ramekin
make a well
crack in an egg, grind salt and pepper on top
gently float a couple tablespoons of heavy cream on top
bake in a low to moderate oven until egg sets to degree you like
Vaguely Tex-Mex
dollop of drained and rinsed canned black beans, hefty pinch of shredded cheese, dollop of salsa mixed together in bottom of ramekin
make a well

blorp on salsa and a dollop of sour cream

Same recipe can be used with canned corned beef hash, beef hash, turkey hash, shredded hash browns and onions, whatever. Baked beans if you are British I suppose
