What my Mom used to do when we had leftover turkey when I was a kid:

Take turkey meat out of fridge and put into a rectangular baking pan

Make gravy and pour over turkey

Bake in oven for 30-45 minutes@325 degrees.

Take out of oven and let cool for a few minutes and then serve it with whatever sides you want (mashed potatoes, veggies of whatever kind are great, as an example.)

Leftovers will be gone . . . guaranteed.

        Win.

Sadly, the first thing I ran out of was squash. Luckily, I only had to eat one squashless meal.

My mother has a recipe for chicken casserole that works quite nicely with turkey as well. We usually have that pretty often after the holidays til the bird's disposed of.

I'll see if I can get her to email me the recipe tomorrow and post it for you.

If you can find a recipe for Chicken Devan, you can substitute turkey for it.

Also, my husband made a turkey stew that wasn't half bad.

He used a bag of frozen stew veggies, cooked turkey, a cup of left-over chicken broth, the rest of the left over gravy. He made biscuits. When the stew was ready, we put a biscuit at the bottom of our soup bowls and poured stew over it. As I said, it wasn't half bad.

            I am officially turkeyed out.

Oh yes, you can make turkey salad (like chicken salad) and put it on your sandwiches.

If I'm ever in the mood for turkey again, I like to pile turkey on a plate, put a glob of mayo on said plate and dip turkey into mayo and eat that way.

              1. Slice (or break apart) Turkey.
              2. Put between 2 slices of bread.
              3. Add mayo, lettuce, tomato, etc.
              4. Eat.

How about a turkey sandwhich with a moistmaker in the middle, a la Monica?

                  Seconded, because moistmakers are awesome!

Although my favorite way to get rid of turkey leftovers is to make pot pies. Though this year, my mom one-upped herself by cooking a turkey a week before Thanksgiving JUST so she could make a bunch of pot pies. Our freezer is now fully-stocked, and they're a great thing to eat for dinner when it's really cold.

I just made some stew with turkey. This was with raw turkey - diced turkey thigh is pretty cheap in the supermarkets, so I stewed it all on the stove with a load of veg and pearl barley, plus some turmeric, cumin, and black pepper. Great feed, and I got loads of cheap portions for the freezer.

                    Can highly recommend it.

                      Creamed turkey en croute.

Saute chopped bacon, mushrooms, onions and a leek if you like them. Stir through cream and a splash of brandy, reduce and thicken witha little flour and season to taste.

Allow to go fully cold and then stir through chopped leftover turkey and ham if you have it.

Roll out a square of puff pastry, pile the filling in the centre and draw the corners to the centre to enclose it. Only join the pastry together at the centre so you have four vents to allow the steam to escape. (alternativly use a deep pie dish with a puff pastry lid.

Cook until the pastry is done and the filling is piping hot throughout.
